Finca Las Barrancas · Day 4

Where the ham comes from

The Dehesa & Iberian Ham

Before it is a delicacy it is a landscape: oaks, acorns and a pig that walks for a living.

The dehesa is not wild country and not farmland either. It is a thousand-year-old compromise between the two — holm oaks spaced wide enough for grass to grow underneath, and pigs that spend the last months of their lives eating the acorns that fall.

You will see it on the Tagus at Finca Las Barrancas, and you will eat the result at a table there. Nobody explains a dehesa properly indoors.
