González Byass, Jerez · Day 7

Sherry is made in a way no other wine allows, in a town that has done nothing else for three hundred years.
Under a veil of living yeast, in barrels that are never emptied and never filled from a single harvest, sherry ages by a system that blends every year that came before it. What you taste has no vintage. It has a lineage.
You visit González Byass, one of the great houses of Jerez, and you taste there. Lunch afterwards is a premium buffet at the Hotel Sherry.
